#MissionSamsung 3 – Challenge 2: Baking Bliss

After a very successful first challenge, we recieved our next challenge.  We could choose between two challenges.  Challenge A – Healthy fried food and easy to clean, or Challenge B – Baking Bliss.  Knowing my family and friends, if I did not choose Baking Bliss, I would never hear the end of it.  Having to choose ONE biscuit recipe out of the million recipes available seemed like an impossible task.  15 Recipes became 10 recipes.  10 Recipes became 6 recipes and 6 recipes became 4 recipes that I was just dying to try out.  Then the idea came to me – The BIG Cookie Showdown.  4 Interesting cookie recipes, 7 judges, ONE winner – or so I thought…..  Lets start at the beginning……

ULTIMATE OREOS

Each batch of biscuits, perfectly mixed to perfection and baked in the Smart Oven.  So simple and easy, using the Smart Cook Feature, setting number 2 (Auto Cook), programme number 11 for cookies.  Instructions:  put dough cookies on the crusty plate and set on the low rack.  While the one batch was cooking, the other batch was being mixed.  This Smart Oven is so fast and user friendly, i made 4 different batches of biscuits in only 2.5 hours from start to finish.  The best thing for me was there is no chance of forgetting about the biscuits in the oven and having burnt bottoms and a kitchen full of smoke (if you have kids, you’ll understand).  It is also super easy to remove from the crusy plate and a rinse in hot soapy water and you are ready for the next batch.

With the four contestants finished and ready to be tested, we shipped them off to a braai we were invited to with the sms “I’m bringing dessert”.  Rugby, cricket, braai, and good wine could not contain the awaiting judges for what awaited during dessert.

After some heavy debating, commenting, finger licking, hair pulling, name calling, attempted competition rigging and some more wine, the results were in….. A TIE.  The Potato Chip Cookie and the MnM Peanut Butter Cookie tied in first place.  What do we do now…  Easy, call in the help of a professional.  A true “cookie” expert, with almost 5 years experience in tasting all kinds of biscuits, she was joined by her assisstant who has almost 2 years “cookie” experience.

AND THE WINNER IS……..

Potato Chip Cookies

Makes about 24 biscuits

INGREDIENTS:

1 cup butter, softened – cut into small blocks
3/4 cup white sugar
3/4 cup crushed potato chips – I used salted (ridged or regular)
1/2 cup chopped pecans
1 teaspoon pure vanilla extract
2 cups all-purpose flour

1/4 cup confectioners’ sugar

METHOD:

  • Cream together the butter and white sugar until light and fluffy, about 3 minutes.
  • With your mixer on low speed, add in potato chips and pecans and mix on low speed until fully incorporated.
  • Add vanilla and mix until thoroughly combined.
  • Stir in flour and mix the flour is just combined, do not over-mix.
  • Place small dough balls 4 cm apart on crusty plate. (if you are making it in the oven, put it on prepared baking paper)
  • Slightly flatten each dough ball with a glass dipped in confectioners’ sugar.
  • Place the crusty plate on the low rack, Auto Cook setting number 11 and press start.  (if you are using an oben bake in preheated oven (180 degrees celsius)  for 12-15 minutes or until lightly browned.)
  • Allow cookies to cool for 5 minutes before removing to a wire rack.
  • If desired, garnish cooled cookies with a drizzle of melted chocolate and a sprinkling of fine sea salt.
