Two Minute Mug Brownie
It’s a nail biting weekend of rugby, your mouth is dry from all the biltong, pretzels and salt and vinegar chips. It’s halftime, your body is craving something sweet, there’s only fifteen minutes during halftime to run to the loo, refill your drink and get something sweet to eat. You open the cupboard – NOTHING.
Not to worry, the Two Minute Mug Brownie is just what you need!
All you need to make one mug of brownie:
Ingredients:
1/4 cup (65 ml) all-purpose flour
1/4 cup (65 ml) packed brown sugar (caramel sugar)
2 Tbsp unsweetened cocoa powder
Pinch salt
2 Tbsp vegetable oil
2 Tbsp milk
2 Tbsp chopped dark chocolate
Method:
- In a heatproof mug, stir together the dry ingredients until no lumps remain.
- Stir in the oil and milk until you have a thick paste. Stir in the chopped chocolate.
- Microwave on high for a minute, checking it after 30 seconds (microwaves vary) – it will be done when it’s springy on top but still a bit gooey – like the very best brownie.
- Eat warm with a big scoop of ice cream or custard.
